Hanukkah latke recipes get a TikTok twist

Latkes are a traditional Hanukkah dish. But even if you don’t celebrate the holiday, you can still give these delicious crispy potato pancakes a try! Latkes are often served with sour cream and applesauce. However, while traditional latkes are delicious, their potential extends beyond the usual recipe. If you’re looking for new takes on the Hanukkah classic, here are five creative latke recipes.

1. Fried pickle latkes

These latkes are kind of a big dill! After mixing shredded potatoes and onions with starch, eggs and salt, season them with garlic powder, paprika, onion powder, cayenne and black pepper. Next, cut kosher dill pickles into quarter-inch slices and dry them off. Coat the dill slices in potato starch, then mold the latke batter around each pickle. Fry until golden brown on both sides. Then serve with a pinch of salt.

2. Extra-crispy latkes

If you like your latkes extra crispy, then look no further than these tips and tricks for maximum latke flakiness. First, TikToker @jakecohen recommends using russet potatoes, as they’re higher in starch and lower in moisture. When grating them with onions, it’s important to squeeze out the water but save the starch. The starch will help bind your latkes and get them nice and crispy. When frying, use a quarter-inch of oil, and make sure to smash down on the latkes with a spatula, since the direct contact between the potatoes and the pan will result in a beautiful golden-brown color.

3. Zucchini latkes

You can make latkes with more than just potatoes. This zucchini variation involves grated zucchini mixed with chopped green onions and kale, combined with eggs, flour, cheese and seasonings. Finally, once the ingredients are mixed, they’re rolled into balls and fried.

4. Golden persimmon latkes

Impress your entire family with these pretty potato latkes. First, grate your potatoes and add a generous amount of salt to them. Squeeze all the moisture out of the shredded potatoes until they feel dry. Next, grate your persimmon and add it to the potatoes along with some cornstarch before mixing. Add an egg, nutmeg and more salt. Then mix again. Fry them until golden brown on each side, and top with flaky salt, sour cream, applesauce and pomegranate seeds. Additional topping combinations include crème fraîche, fish roe and chives, as well as persimmon slices, flaky salt and dill.

5. Latkes with cranberry sauce

Sometimes the best part of a meal is the sauce! This classic latke recipe takes it to the next level with cranberry sauce. TikToker @hungry.blonde uses canned cranberry sauce mixed with orange zest, rosemary and lemon juice to make the sauce. They top off their latkes with the cranberry sauce followed by some crème fraîche and a rosemary garnish.
