Hack Alert! You Can Turn Store-Bought Pie Dough Into Cannoli Shells

I had never thought (or wanted) to make my own cannoli shells. Unless we're talking we're talking bacon. I'd rather buy some from the bakery or ditch them all together. Cannoli dip, cupcakes, pancakes … YAS PLEASE! Who even needs the shells?

But then my boss asked me to try making some with pie crust. I couldn't say no, obviously, but I had major doubts. I thought at the very best, we would come up with some janky but edible pie crust shells. I was so wrong. While it's not the quickest, easiest process, you can make beautiful, buttery cannoli shells using store-bought dough. Without a cannoli roller, and without frying! Here's how:

Use a biscuit cutter (or a wide mason jar) to stamp out small rounds from refrigerated pie crust and sprinkle everything with a lot of cinnamon-sugar (because why not?). Then roll and bunch a large square of foil into a long and tight cylinder. Wrap the mini pie crust circles around the foil and pinch the edges to seal. Bake until golden and crispy.

Don't try taking the crust off the foil right away! 1. The foil will be effing hot. 2. The crust releases more easily after it's cooled a bit. During this process, you may have some broken casualties. Don't panic. This step requires tricky maneuvering and lots of patience. Sometimes, pinching the foil in between the shells helps, but there's no graceful or perfect way to do it.

As for the filling, you can go classic, and everyone would be happy. OR you can go the pumpkin route and be the hero of fall.
