Gluten-Free Cranberry Lemon Cake

This festive cake comes from New York-based Kaitlin Kaulius. Diagnosed with celiac disease four years ago, Kaulius removed removed gluten from her diet and added a blog to her repertoire: Gluten Free Blondie features simple and delicious celiac-friendly recipes. And for a glimpse into the life of a twenty-something with celiac disease, you can also check out her other (very funny) blog, When I Went Gluten Free.

Now, let’s talk cake! Kaulius’s beautiful cranberry lemon concoction calls for very few ingredients, but one of them is of utmost importance: Cup4Cup, a gluten-free flour that can stand in for normal flour in any recipe. After she pours the batter into a 9-inch cake pan, she tops it with sugared cranberries and ultimately serves “a really fluffy moist cake”. Check out Kaulius’s recipe for the easy tutorial.
