Unlike the unicorn trend, we've been hesitant to jump on the galaxy food explosion. Maybe because it seemed a little darker, a bit more mysterious than unicorn desserts and their pretty pastels. Well, unicorns aren't real (right?!), but the galaxy is and this cheesecake proves it's definitely worth believing in.

We wanted to create a galaxy dessert that hadn't been done before; ice creams and cupcakes are everywhere, but cheesecake not so much. We used our favorite technique for swirling together the different colors, which, BTW, will make you feel like a dessert boss. But you don't to be crazy talented to pull this off: After you make a standard cheesecake mixture, you divide it into the same number of bowls as colors you'd like to use. I debated my color scheme, but ultimately decided that black and bright teal and blue needed to make appearances.

I added sprinkles before baking the cheesecake, something I had never tried before. They sink into the batter as they bake, but not in a bad way-it added actually added to the galactic look. The result is a trippy, tie-dyed dessert that will everyone excited to take a bite.
