Absolutely. If you have a ton of peaches, it makes total sense to freeze the excess for later. You’ve got to do it the right way, though, as improperly frozen peaches will be mushy and grainy.

How to Freeze Peaches

Here’s what you need to do:

  1. Peel: Blanching peaches makes peeling a cinch. To blanch, just boil for a few minutes and then quickly transfer to an ice bath. After they’ve completely dried, the peel will slip right off.

  2. Slice: Cut the peeled peaches into ½- to 1-inch slices.

  3. Toss: Toss the peach slices with a bit of lemon juice—this acidity will help preserve color and flavor.

  4. First freeze: Arrange the slices in an even layer on a baking sheet, cover with plastic wrap, and place in the freezer. The slices should be frozen in 3-4 hours.

  5. Second freeze: Once they are completely frozen, you can transfer the peaches to a plastic bag labeled with the date. Freeze for eight months.

The best way to thaw frozen peaches is in the fridge: Just transfer them from the freezer to the refrigerator the night before you plan to use them.

You can also submerge the bag of frozen peaches in cold water to thaw them completely in just a few hours.

Make sure to drain and dry the thawed peaches before using to get rid of the excess moisture.
