Everyone on TikTok Is Going Crazy for Pesto Eggs

PSA for whoever needs to hear this: Pesto is not just for pasta.

Ree Drummond has long believed that pesto makes everything better, and now a tasty new twist on eggs is proving her right.

Yes, the savory green sauce just sashayed its way into breakfast, thanks to a delicious new food trend fresh out of TikTok: pesto eggs!

Basically, pesto eggs is a dish that combines everybody's favorite breakfast staple with the rich, robust flavors of garlic, Parmesan cheese, and pine nuts. How could you go wrong?

The trend took off after registered dietician Amy Wilichowski (@amywilichowski) recently shared her recipe on TikTok.

In her viral video, Amy breaks down her method step by step.

"All you do is use pesto instead of the normal cooking oil that you cook your eggs in," she explains in the video, which now has over 10.5 million views and 1.4 million likes. "You can do a fried egg, scrambled eggs, a sunny-side-up egg."

After she finishes cooking the eggs, Amy assembles a mouthwatering toast featuring bread, ricotta cheese, avocado, the pesto eggs, honey, salt, pepper and red pepper flakes.

As the pesto eggs movement picked up steam on social media, plenty of people put their own spin on it, including Damon of @darnitdamon, who shared his recipe for pesto eggs with "an Asian twist." To make this, Damon put his pesto eggs on some roti, a traditional Indian flatbread, and topped it all off with a sprinkle of cheese and a swirl of chili oil.

Meanwhile, @625_experiments combined a new favorite with an old favorite to create pesto egg avocado toast. Rather than cooking the eggs in pesto, this TikToker opted to spread pesto onto toast and top it with avocado, a fried egg, and more pesto.

If you're interested in making a vegan version, Danielle Keith of @healthygirlkitchen has got you covered.

Danielle's version swaps out the eggs for pan-fried tofu cut into circles, with turmeric in the middle to mimic the yoke. She then adds vegan pesto to the pan and transfers the concoction to her favorite toast. So creative!
