FYI, we're talking about a totally sweet dilla. Remember the Caramel Apple Quesadilla or cheesecakeadillas? Those are pure dessert, even if there are tortillas involved, and so is this. So don't go freaking out about the idea of Monterey Jack and Hershey's melting together. (Although the combination of brie and chocolate is totally different story.)
As far as ingredients go, you don't need many: just flour tortillas, a bit of butter, cinnamon-sugar, crushed graham crackers mini marshmallows, and chocolate. We highly encourage, however, that you stock up on plenty of the last two.
Rather than a campfire, a s'more quesadilla starts on the stovetop in an ovenproof skillet. Melt some butter then load a tortilla with marshmallows, crushed graham, and chocolate. Top it off with another tortilla and cook until the bottom tortillas is nice and golden. Carefully flip the quesadilla, sprinkle the top with cinnamon-sugar, drizzle melted chocolate on top and cover the entire top of the quesadilla with more marshmallows. (I warned you this was over-the-top.) Broil until toasty, not burned. A blazing marshmallow might be your move at a bonfire, but it's not okay in the kitchen.
