Creamy No-Oil Caesar Dressing from ‘Homemade Vegan Pantry ‘

Creamy No-Oil Caesar Dressing
Makes about 2 cups

Why use oil when you really don’t have to? This creamy Caesar dressing will not leave anyone wanting.

3 ounces medium, medium-firm, regular, or silken tofu
1/3 cup water
1/3 cup freshly squeezed lemon juice
3 tablespoons soy sauce
3 tablespoons Dijon mustard, homemade or store-bought
3 tablespoons almond meal
3 tablespoons nutritional yeast
1 tablespoon balsamic vinegar
½ sheet nori
4 cloves garlic

Put all of the ingredients in a blender and process until creamy. You can add more garlic, depending on how garlicky you like it. Store in the refrigerator for up to 2 weeks.
