Courteney Cox’s Hamburger Soup Is the Definition of Winter Comfort Food

We’ve been trying to cook like Courteney Cox ever since we got a hold of her baked chicken recipe, and let us be the first to say that Chef Monica never misses. The latest addition to her tasty collection? Hamburger soup, a winter dish that’s filling, kid-friendly and oh so comforting. Read on for the details.

“It takes 45 minutes, and it’s delicious,” Cox states in an Instagram video. We believe it: The recipe—which was seemingly inspired by or borrowed from The Pioneer Woman, according to the video’s caption—leans on savory pantry staples, fresh veggies and satiating ground beef for flavor.

This is mostly a set-it-and-forget-it recipe. The most time-consuming part of preparing the soup is slicing and dicing all the produce ahead and draining the beef after browning; your stovetop will essentially do the rest. In case that’s not easy enough for you, you can also be flexible with some of the pricier ingredients, namely the herbs. “You can used dried oregano or fresh,” Cox says, and the same goes for parsley.

The timing is flexible too, so you’ll need to check the doneness of the heartier veggies to ensure they’re tender before turning off the heat. “Simmer it anywhere from 20 minutes to, it can even be 40; depends on how big your potato chunks are, and carrots,” she explains.

Personally, we’d add cheese to the top of our bowl for a play on cheeseburgers, or even crumbled bacon. Ketchup would offer vinegary tang to the soup too, and it can be added along with the whole tomatoes. No matter how you riff on the O.G., we’re sure this cozy soup won’t disappoint.
