Our post-Memorial Day mantra? More alfresco dinners, fewer dirty dishes. When we’re looking to cook a meal in a flash and avoid a time-consuming cleanup, we lean on our trusty sheet pan to see us through. Here are seven delicious ways to use yours this week.
1 pint heirloom cherry tomatoes
19 garlic cloves
1 inch fresh ginger
1 red bell pepper
1 orange bell pepper
2 red onions
1 pound baby new potatoes
2 Meyer lemons
1 pint grape tomatoes
2 large heads cauliflower
3¼ pounds potatoes
2 bunches scallions
1 bunch dill
1 bunch parsley
1 bunch broccoli rabe
4 bunches basil
1 bunch cilantro
2 boneless, skinless chicken breasts
4 skin-on salmon fillets (about 8 ounces each)
4 mild Italian sausages
12 skin-on, bone-in chicken thighs
1 large ball fresh mozzarella
1 stick unsalted butter
3 ounces grated Parmesan
12 ounces coconut milk yogurt
16 ounces potato gnocchi
6 ounces basmati rice
Cooked brown or white rice, for serving
Canned and Packaged Goods
Toasted sesame oil
Raw, unsalted cashews
One 14-ounce can white beans
Yellow mustard seeds
Pantry Ingredients: olive oil, kosher salt, freshly ground black pepper, soy sauce, honey, rice wine vinegar, garlic salt, paprika, onion powder, crushed red pepper flakes, nonstick cooking spray, garlic powder, dried oregano, dried basil, cumin, cayenne
Monday: Pan con Tomate and Mozzarella Bake
Tuesday: Sheet-Pan Cashew Chicken
How Sweet Eats food blogger Jessica Merchant has this foolproof recipe down to a science. The trick is roasting the veggies on their own first until they’re soft and caramelized, then adding the chicken so everything finishes cooking at the same time.
Wednesday: Joanna Gaines’s Weeknight Salmon with Baby New Potatoes and Dill
The key to this herby, citrusy main is cutting a few deep slits in the salmon, so the butter and fresh herbs can seep into each fillet. Save the leftovers in the fridge (if you have any, that is)—they’ll be good for up to three days.
Thursday: Sheet-Pan Tomato Basil Gnocchi
Thanks to simple homemade pesto, this dish is short on time and big on flavor. Cherry tomatoes are also roasted to perfection alongside easy store-bought gnocchi, so they burst and create their own natural sauce.
Friday: One-Pan Sausage with Broccoli Rabe and White Beans
Italian sausage is affordable, flavorful and a breeze to cook. Here, its bold, fennel-y taste pairs beautifully with bitter broccoli rabe and mild white beans. May we suggest serving it all over a bowl of pasta?
Saturday: Roasted Tandoori Cauliflower Bowls
The traditional main ingredient is chicken cooked in a big clay oven, but we substituted our favorite cruciferous veggie for a meat-free spin. Word to the wise: Go wild with the tahini drizzle on top.
Sunday: Sheet-Pan Indian Spiced Chicken
Proof that Nigella Lawson is a genius: The spiced, lime-kissed potatoes and chicken roast side by side, so the spuds soak up alllll the acidic, schmaltzy juices.
