Here’s What to Cook Every Night This Week (June 7 – 13)

Our post-Memorial Day mantra? More alfresco dinners, fewer dirty dishes. When we’re looking to cook a meal in a flash and avoid a time-consuming cleanup, we lean on our trusty sheet pan to see us through. Here are seven delicious ways to use yours this week.

1 pint heirloom cherry tomatoes

Nothing fights off a case of the Mondays like a tray of toasty bread, blistered tomatoes and ooey-gooey cheese. Serve it with an arugula or spinach salad if you’d like.

How Sweet Eats food blogger Jessica Merchant has this foolproof recipe down to a science. The trick is roasting the veggies on their own first until they’re soft and caramelized, then adding the chicken so everything finishes cooking at the same time.

Wednesday: Joanna Gaines’s Weeknight Salmon with Baby New Potatoes and Dill

The key to this herby, citrusy main is cutting a few deep slits in the salmon, so the butter and fresh herbs can seep into each fillet. Save the leftovers in the fridge (if you have any, that is)—they’ll be good for up to three days.

Thanks to simple homemade pesto, this dish is short on time and big on flavor. Cherry tomatoes are also roasted to perfection alongside easy store-bought gnocchi, so they burst and create their own natural sauce.
