Christie Brinkley’s comfort recipe is a cocktail that doubles as dessert — and uses organic, vegan ingredients

If you’re feeling stressed, chances are you might be cooking for comfort — and if you’re looking for a recipe that’s delicious but also uses ingredients that are organic, vegan and sugar-free, Christie Brinkley’s got you covered. Bonus: It’s a treat that does double-duty as a dessert and a cocktail. “We’re stressed out,” Brinkley tells Yahoo Life in the video series Cooking for Comfort. “We could all use a drink, so I am here to make sure that you have a really good one.” The actress and model shared her simple recipe for a grapefruit granita, which is similar to a sorbet, but with a fluffier and crunchier icy texture. To make the granita, Brinkley blends frozen grapefruit juice, then mixes it with her organic, vegan Bellissima Prosecco, which comes in three expressions — a sparkling rosé, a brut and a zero-sugar sparkling wine. Christie Brinkley’s Grapefruit Granita Cocktail Ingredients Frozen grapefruit juice Bella Sprizz Aperitif Liqueur Bellissima Prosecco Sparkling Rosé Sprig of fresh mint (optional) Steps Purée the frozen grapefruit juice in a blender. Portion out the mixture into a cocktail glass. Using the back of an ice cream scooper, press gently into the mixture so it forms a little cup. Pour the Bella Sprizz into the cup, then add the Bellissima Prosecco Sparkling Rosé. Garnish the drink with a sprig of fresh mint. I know you know about my organic Bellissima Prosecco. I'm going to make a grapefruit granita. I have frozen the grapefruit juice. And I put it in these squares, which are actually really good for drinking tequila straight over square ice cubes. Voila.

Now I have to find a setting that instead of making a frose, I want to try and make it more granulated. Daisy, don't eat the grapefruit juice. I think that it might be this one with the little snowflake here. So I'm going to give that a try. I've done the setting.

CHRISTIE BRINKLEY: OK, well, it's good enough. OK. There we go. Woo! Yes! This looks amazing. An ice cream scooper, OK? So if you have an ice cream scooper, you can push it down in the middle to make like a little cup.

Then you're going to take my [INAUDIBLE] Aperitivo. This is a very trendy drink right now. And you put a little nest of it in the middle. Wow, this is gorgeous. Now you're going to choose one of these, the brut, the rose, or the zero sugar.

The rose is so pretty, and who doesn't love a sparkling rose?

Ah! Woo-hoo! And then you're gonna go like this. Ooh, you get a little [ITALIAN ACCENT] explosion of "boo-bellies." In English, that's an explosion of bubbles.
