My idea of hibernating this winter will involve making myself into a blanket burrito while cradling an actual burrito from Chipotle. But if fillings like chicken, barbacoa, and steak aren't quite enough variety for you, Chipotle is rolling an even richer and cozier protein for some locations this season: brisket.

Yes, Chipotle is testing out the option to fill up your burrito bowls with classic smoked brisket. The chain says that its meat is made with a "special spice blend, seared on the grill every day, and finished with a sauce made with Mexican peppers" for maximum stick-to-your-ribs-ness. Sounds like it will go perfectly with chips and guac...and a nap afterwards, TBH.

The chain is using a "stage-gate process" to offer this in certain locations, get customer feedback, and decide when, if, and how they'll be rolling it out nationwide. They did a similar process with Carne Asada, Supergreens Salad Mix, and Queso Blanco, all of which were rolled out nationally after their tests. So here's hoping whoever gets to try it puts in a good word for the rest of us!!

Brisket will be available for in-restaurant, online, mobile, and contactless delivery orders only at participating locations in Cincinnati, OH, and Sacramento, CA, for a limited time. So if you live near one of those cities, start doing some Googling to see if you can add a brisket burrito to your holiday wish list. Finding one of these in your stocking would be WAY better than coal.
