Apricots + Ricotta + Pistachios = Awesome

So pretty and so delicious; it’s apricot season and this simple, healthy recipe is all about this stone fruit of the moment.

Apricots are a little tart and tangy and coating the cut halves with a touch of sugar balances the flavor and encourages them to caramelize when you broil them. The riper the fruit the quicker it will caramelize.

Topped with creamy, fresh ricotta and toasted, chopped pistachios, this dish makes a great breakfast or snack or a simple yet sophisticated dessert.

1 tablespoon sugar

4 apricots, halved and pitted

8 teaspoons fresh ricotta cheese

2 tablespoons chopped pistachios

1. Preheat broiler. Place sugar in a small saucer. Dip cut side of apricots in sugar to coat and transfer to a small broilerproof baking dish. Broil, rotating once, until apricots are caramelized and juicy, 3 to 4 minutes.

2. Remove apricots from oven. Let cool slightly and top with ricotta and pistachios. Serve immediately.
