1. Mother’s Day mini pancakes with bacon, eggs and a strawberry smoothie

What better way to kick-start Mother’s Day than with adorable stacks of mini pancakes? This two-part recipe features a plate of oven-baked bacon shaped like hearts arranged next to a heart-shaped bowl of scrambled eggs. 2. Mother’s Day baked frittata

Mom will definitely want to “quiche” the cook who made this tasty baked frittata. Start by filling a baking dish with cherry tomatoes, diced red potatoes, shallots, bacon slices, salt and pepper. Next, thoroughly mix the ingredients. Then bake at 400 degrees Fahrenheit for 20 minutes. Remove from the oven and stir the ingredients again before broiling them on low for 10 to 15 minutes, until there’s a slight char. After broiling, pour a mix of eggs, milk, garlic powder, salt, pepper and green onions over the ingredients in the baking dish. Finally, bake again for 15 minutes at 400 degrees Fahrenheit.

Waffles just taste sweeter when they’re in the shape of a heart. First, add water, oil, eggs and strawberry Funfetti cake mix into a smoothie shaker. Once shaken, pour the batter into a waffle maker with heart-shaped plates. When the waffles are done, transfer them to a platter and decorate with an assortment of fresh berries and dollops of whipped cream.

This French toast recipe is stuffed with vegan berry cream cheese goodness. Begin by adding freeze-dried raspberries and blueberries to a food processor. Then combine with lemon zest, vegan cream cheese and maple syrup. Next, carefully stuff each slice of bread with the mixture. Then soak them in a batter made of whisked flour, plant-based milk, sugar and vanilla extract. Pan-fry the French toast over medium heat until golden and crispy.
