One of our favorite things about springtime is the opportunity to add more fresh vegetables to our plates! There's no better way to serve lettuce, green beans, peas, and radishes than in one of these delicious spring salads. From a healthy lunch to the perfect side dish to accompany a delicious Easter ham, these salad recipes will convince the whole family to eat plenty of health meals.
Every great salad begins with a bold and flavor-packed salad dressing. And while you could buy your favorite brand, there are plenty of great vinaigrette recipes out there (like these vegan dressings!) that aren't loaded with sodium or other unnecessary ingredients. Picking the right veggies are also important when building a satisfying salad. Top tip: you can grill or char your vegetables to give them plenty of extra flavor (like we did for our Grilled Green Beans, Fennel, and Farro recipe).
