Our favorite haunts for espresso, pour overs, and CBD-infused nitro cold brews (this is Colorado, after all).

Set the scene—where are we?
Here’s a slice of high Scandinavian style along a still-gritty stretch of RiNo. Enter from the covered patio at the edge of the courtyard lawn into a room with well-lit nooks, sparkling in white and blue, with just a few tables lining the banquette against one tiled wall and a few stools along the garage window opposite. Vintage light fixtures, a nifty assemblage of color-coordinated giftware, and a mounted butcher-paper scroll listing the drinks in script enhance the picture-perfect design.

You’d swear owner Jeffrey Knott installed the crowd here to match the interior. Though not necessarily decked out in blue and white, the patrons seem to blend right into the scenery with their beards and top knots and sundresses and booties. They’re the cool cats whose order you know before they say it: a golden latte, a Japanese iced coffee, or a CBD-infused nitro cold brew.
What's on the menu? The 15 or so core options range from filter coffees and flat whites to cortados and mochas. What’s special about Knott’s program, though, is his sourcing: He goes the extra mile in search of up-and-coming roasters from around the world to feature something new every three or four weeks. Perhaps you’ll develop a crush on Dapper & Wise out of Hillsboro, Oregon, on one visit; Salt Lake City’s Blue Copper the next; La Cabra all the way from Denmark the next. Pair your new discovery with a locally baked pastry—or don’t. Food-wise, your option is pretty much take it or leave it.
How about the staff: what did you think?
Service is just right: well-trained, well-informed, and easygoing.
What's the bottom line?
Blue Sparrow’s worth a visit for its suave ambience alone. And though it obviously caters to coffee aficionados—you won’t find some of these roasters anywhere else in town—it’s got a little something for everyone who digs its vibe: housemade blueberry soda, tea, canned beer and wine, even frosé.
