What’s for Dinner Tonight: Grain-Free Salmon Cakes

I like to think of salmon as the superfood of the sea. From cognitive function, to heart and even eye health, omega-3-rich foods like wild-caught salmon have been shown to positively impact nearly every part of our bodies.

But let’s face it. Having the same grilled salmon recipe for dinner every night can get boring, fast. Enter these delicious salmon cakes. This recipe takes only a half hour to prepare, and the use of canned salmon makes the dish affordable and easy to whip up with very little advance notice (just make sure to avoid farm-raised salmon, though).

And while most fish cakes use bread crumbs as a binder, this recipe relies on almond flour and beta carotene-packed sweet potato to hold it together. The resulting cakes are gluten- and grain-free, making them friendly for Paleo devotees or anyone else who wants to avoid the negative health effects that can result from over-consumption of refined carbohydrates.

Oh, and they taste great, too.

Salmon Cakes Recipe

Total Time: 30 minutes Serves: 4-8

INGREDIENTS:

  • • 1 sweet potato, cooked, peeled and mashed

  • • ¾ cup almond flour

  • • 1/3 cup fresh parsley, chopped

  • • 3 strips turkey bacon, cooked and crumbled

  • • 3 tbsp onion, chopped

  • • 1 tbsp lemon juice

  • • 1 tbsp sea salt

  • • 1 tsp dill

  • • ½ tsp black pepper

  • • 2 eggs

  • • 2 cans (14 oz) salmon, bones/skin removed and drained

  • • 2 tbsp ghee

  • • 2 tbsp pecorino cheese, grated

DIRECTIONS:

  1. Combine all ingredients except ghee in a bowl and mix until well combined.

  2. Form patties and place in saucepan with ghee over medium high heat.

  3. Cook for 4-6 minutes on each side.
