Coconut-Almond Chocolate-Dipped Cherries

Yoga star Kathryn Budig is known for her ability to make yoga accessible and playful through her teaching and writings, but her skills extend beyond the yoga mat — all the way to the kitchen. Below, she shares her recipe for chocolate-dipped cherries.

It’s summertime and that means cherries! I love these little bombs of flavor in both sweet and savory situations, but was feeling an urge to satisfy my sweet tooth. Everyone loves a good chocolate-dipped strawberry, but what better way of upgrading than dipping cherries in this gorgeous ganache with a sprinkling of almond and coconut goodness?! These are a cinch to make, delicious, and a great party or date-night pleaser.

Ingredients:
20-30 red cherries
1 cup dark chocolate chips
1 cup light canned coconut milk
1 tablespoon white creme de cacao
½ cup unsweetened coconut flakes
½ cup ground almonds
2 teaspoons Maldon or sea salt, plus extra to garnish

Directions:
Melt your chocolate, coconut milk, creme de cacao, and salt in a double boiler on medium heat, stirring often until fully combined. Remove from heat and let cool for 5-8 minutes.
Create your dipping station! Place your coconut and ground almonds into individual bowls and line a cookie tray with parchment paper. Wash cherries and pat dry. Dip each cherry into the chocolate and twirl off any excess. Dip in almonds, coconut, or both. Place onto your cookie sheet. Repeat until all cherries are dipped. Sprinkle with a light dusting of salt crystals. Transfer to the refrigerator and let cool for an hour. Eat … or use to tempt!
