How to Make an Omelette

The Perfect Omelette
Serves 1

A perfect omelette is golden in color on the outside and creamy in texture inside. Be sure to use the highest possible heat! The whole process should not take more than 1-2 minutes.

3 eggs
Kosher salt
Freshly ground pepper
1 tablespoon butter

Crack eggs into a small bowl and, using a fork, gently beat with salt and pepper.

Over high heat, melt butter in an 8-inch nonstick skillet. Swirl butter around pan to coat. When foaming has subsided and butter has a nice hazelnut color, pour in eggs. Listen to them sizzle!

With a rubber spatula, stir eggs for 5 seconds. Simultaneously shake pan back and forth with your other hand so eggs cook uniformly.

Lift pan slightly so curds in center pile towards front of pan. Fold lower lip over, shaping omelet into a half-moon. Then, run your spatula along side of pan under front of omelet, tap handle of pan to encourage it to lift up, and, using spatula, fold upper lip onto center of omelet. You now should have a nice envelope!

Gently slide onto a plate and eat immediately.
