The Green Juice That Will Save You from Holiday Season

The holiday parties have started. You’ve got Friendsgiving, then Thanksgiving, then the big office party, and then you don’t have a free evening in December until Christmas Eve, which will involve even more meat and booze than did the previous gluttonous days combined.

The point is: Winter cocktail party season is full of fat and salt and alcohol, and while it’s glorious, it’s also draining.

Enter The Green Drink. Make it every morning and bring yourself back in the general direction of normalcy. It’s packed with vitamins, good fats, and a hit of protein, it counts as a full meal, and it ought to get your brain functioning fully again just in time for that 9 a.m. meeting. And it’s portable. For the recipe, we turned to chef Fernando Aciar and impossibly always-hydrated-looking Gaeleen Quinn, who together own Feel Food NY, a new health-minded juice bar, lunch spot and market in New York City. Everything’s organic, all the ingredients are raw, and nut milks, vegetable chips and basically everything else are prepared in-house. This is the place to go when it comes to restoring balance. So go on and drink green—and then you can drink some more wine tonight.

Very Verde
Serves 1

1 large collard leaf
1/4 pear, “whatever kind is ripe”
1/2 avocado
A handful of fresh parsley, “stems and all”
1/4 tsp. chlorella (optional)*
1 Tbsp. raw honey
1 tsp. fresh lemon juice 
3 oz. organic coconut milk
5 oz. water
2 oz. ice

*Chlorella is a kind of single-cell green algae and a good source of protein. Find it in health food stores or online.

Put all of the ingredients in a blender. Blitz for about 60 seconds. Pour into a cup. Go!
