In this video for Bon Appétit, Mason, who founded research firm Fast Forward Labs, analyzed menu offerings, customer reviews, and ingredients to pinpoint where to find the ultimate taco.

By looking at the most popular fillings, wrappers, and ingredients available at taco joints, Mason discovered chicken is the most popular meat found in tacos by availability, but fish is the meat filling people order most at restaurants.

But that’s not all — the data analyst determined what type of fish and what type of shell, hard or soft, is most popular.
