Roasted Peppers with Baked Eggs
Serves 1

For years one of my favorite quick meals was roasted peppers stuffed with feta cheese and harissa; this is now one of my boyfriend’s favorite dishes and he makes it all the time. However, as I rarely eat feta, I wanted to come up with something else to stuff inside these delicious peppers. I tried an egg and — lo and behold! — it worked. It’s great to eat at any time of the day. You can cook up a few in batches and keep them in the fridge to eat cold. It’s a no-fail, great make-ahead recipe. Get creative and see what else you can stuff inside that pepper!

1 large fresh pepper, washed, halved, and seeds removed
Olive oil
8 sun-dried tomatoes, finely chopped
2 teaspoons harissa paste
A handful (approx. 1 ounce) of fresh baby spinach, roughly chopped
Sea salt and freshly ground black pepper
2 eggs, preferably free-range or organic
A small handful of fresh basil leaves, finely shredded

Preheat the oven to 350ºF

Put the pepper halves on a baking sheet, drizzle with a little olive oil and roast for 10 minutes.

Meanwhile, mix the sun-dried tomatoes and harissa paste together in a medium-sized bowl. Add the spinach and combine. Season with salt and pepper.

Remove the peppers from the oven. Spoon the tomato and spinach mixture into the peppers. Use the spoon to make a well in the center, then break a whole egg slowly over the top of each half (take care not to let the egg spill over). Return to the oven and bake for 16 to 18 minutes until the egg yolk is cooked as you like it. I like mine just a little bit runny.

Sprinkle with a little shredded basil before serving.
