This No-Bake Layered Chocolate Cake Is a Sweet Finale to a Summer Meal

I have made a ton of no-bake desserts, but this may be my best recipe yet! Layers of chocolate graham crackers, rich mascarpone and whipped cream come together for a no-bake dessert that tastes like the perfect Oreo dunked in milk. Pull it out of the fridge and garnish with shaved chocolate (looks super-fancy, but it’s so easy!) just before showtime for a sweet and refreshing dessert.

No-Bake Layered Chocolate Cake
Serves 8
Prep time: 20 minutes, plus 12 hours to chill

Ingredients
3 c heavy cream, cold
1/3 cup confectioners sugar
1 c mascarpone cheese, softened
1 box chocolate graham crackers
1 small piece semi-sweet chocolate, for garnish

Directions
1. In a standing mixer, whip the heavy cream until a medium peak holds, about 2 minutes. Add the confectioners sugar and mascarpone, and whip until combined, about 30 seconds.
2. Spread a layer of the cream mixture on the bottom of a cling wrap lined casserole or loaf pan. Arrange the crackers in a single layer, and then spread another layer of the cream mixture. Repeat layers until pan is filled, endings with a layer of the cream.
3. Chill cake, overnight, until the cookies have softened. Gently cut into pieces to serve, using the plastic wrap to help the first piece out of the pan. Garnish with chocolate curls (shaved with a vegetable peeler) and enjoy.
