Landlocked Ceviche
Makes enough for 4 to 6 people

So yeah, there’s no seafood in this dish, but we don’t think your a** will miss it, and the fish won’t be mad either. Instead we’ve got the always affordable cauliflower stepping in. The lime juice breaks down that fibrous motherf***er, resulting in a tasty-a** salad or dip that you won’t want to share. Just cancel the party now and keep it to yourself.

1 small head of cauliflower, chopped into tiny-a** bites (about 2 1⁄2 cups)
2 cups diced tomatoes (about 4 medium-sized)
1⁄2 cup chopped red onion
1 jalapeño, diced
1⁄4 teaspoon salt
1⁄2 cup lime juice
1⁄4 cup chopped cilantro
1 avocado, diced
Black pepper, to taste

In a medium bowl, mix together the cauliflower, tomatoes, red onion, jalapeño, salt, and lime juice. Add the cilantro and let that sit in the fridge for at least 1 hour so that the lime juice has some time to soften everything up. That’s its job, so let that f***er work.

Add the avocado and serve right away, with black pepper to taste.
