Jim Carrey Loves His Pecan Pie on ‘SNL’

Who loves pecan pie? Jim Carrey does. Or rather, “Helvis”the Elvis-devil hybrid the comedian concocted for the opening monologue of the most recent Saturday Night Live—does.

Sound wacky? Well, yes. Carrey’s only explanation for his over-the-top act, for which he donned a red, rhinestone-studded jumpsuit and devil horns and sang an entire Elvis-inspired ode to the seasonal dessert, was that “man can not live on fried peanut-butter-and-banana sandwiches alone.”

Alrighty, then.

The whole thing may be more high-minded than it appears, however: As Rolling Stone points out, the routine bears a striking resemblance to a 2003 short film by Eternal Sunshine of the Spotless Mind director Michel Gondry, in which Carrey motors around in a bed fitted with wheels and sings about pecan pie in his very best Elvis voice.

Well, Helvis is one way to publicize Dumb and Dumber To, the sequel to the 1994 Farrelly Brothers comedy Dumb and Dumber thathits screens November 14. It’s unclear as to whether (as in When Harry Met Sally) a pecan pie will make a cameo… but we might just bake pecan pie in anticipation, anyways.

Perhaps this one from Garden & Gun, which calls for a hearty splash of bourbon? After all, man can not live on fried peanut-butter-and-banana sandwiches alone.

Bourbon Pecan Pie Filling

Yield: fills one 9-inch crust

Roll out one dough disk and fit in 9-inch pie pan, crimping edges. Ingredients

¾ cup granulated sugar
1 ½ cups dark corn syrup
½ tsp. kosher salt
1 ½ tsp. all-purpose flour
3 large eggs
1 ½ tsp. vanilla
2 tbsp. bourbon
1 ½ tbsp. melted sweet butter
1 ¾ cups pecans

Preparation: Using a hand mixer, combine sugar, syrup, salt, flour, and eggs, mixing well. Stir in remaining ingredients and pour into unbaked pie shell.

Preheat oven to 350° F.

Bake in preheated oven for 1 hour and 15 minutes (a toothpick inserted in center should come out relatively clean). Remove from oven and place on cooling rack, allowing pie to rest for 2 to 3 hours to set.
