Mention avocado toast around fans of the filling but healthy treat, and you’ll be bombarded with everyone’s favorite way to create it — sprinkle it with chili flakes, cut a hole in the toast and fry an egg in it, or layer it with scallions and radishes. If you haven’t tried it, this video will get you hooked. Watch out for tip on the fail-safe way to tell if an avocado is ripe.

Avocado Toast
Serves 2

1 avocado, cubed
1 tablespoon fresh lemon juice
2 thick slices hearty seeded bread or sourdough
Extra-virgin olive oil
1/8 teaspoon red chili flakes
1 teaspoon flaky sea salt
1 hard boiled egg, crumbled

In a small bowl, toss avocado with lemon juice and set aside.

Warm a medium skillet on high heat. Drizzle each side of bread slices with oil. When skillet is hot, toast bread on both sides. If you prefer, you can toast the bread in a toaster or toaster oven.

Remove avocado from the bowl, shaking off any excess lemon juice. Divide and place on bread slices, then mash with the back of a fork. Drizzle with a little more oil and sprinkle with crumbled egg, flaky sea salt, and chili flakes.
