How to Make Dining Hall Chilaquiles
In 2014’s Ultimate Dining Hall Hacks (Storey Publishing), author Priya Krishna showed college students 75 ways to mix and match dining hall ingredients to concoct marvelous meals. Example: You want cheesecake, but only chocolate cake is available. Solution? Place a sugar cookie in a mug, top it with a few dollops of cream cheese, finish with strawberry jam, and you’ve got cheesecake in a cup. As the school year is almost over, we’re sharing five of Krishna’s hacks throughout this week. Finish strong, students!

Chilaquiles
Chilaquiles are a super flavorful Mexican breakfast dish made of tortillas and eggs. I had this meal for the first time when I attended summer camp in Cuernavaca, Mexico, during high school. If you are into breakfast burritos or huevos rancheros, you should definitely consider adding chilaquiles to your morning routine.
Tortillas or tortilla chips
Tomato sauce
Salsa
Grated cheddar cheese
Beans
Scrambled eggs
Avocado, optional
Equipment
Microwave
Rip the tortillas into bite-size pieces and spread them out on a plate. If using tortilla chips, just put a big handful on a plate.
Pour a large scoop each of tomato sauce and salsa over the tortillas.
Add grated cheese, beans, and eggs, and microwave the dish for 1 minute, or until the cheese melts
Top with avocado slices and more cheese if you’d like.
