How to Bake Perfectly Round Cookies

Who can resist an icebox cookie? The term refers to a cookie made from dough that’s been rolled into logs and refrigerated or frozen until stiff, so it’s easy to slice into perfectly round, delectable discs.

But! There’s a special kind of frustration reserved for times when those adorable circles end up with misshapen edges when baked—the result of one side getting squished in the fridge. But “Kitchen Conundrums” host Thomas Joseph has a simple trick for avoiding this unsightly situation.

And it’s really easy. All you need to do is shape the dough into a cylinder, cover it with parchment paper, and stick the whole shebang into an empty paper towel cardboard roll, which acts as a cradle for the dough.

The logs cool in the refrigerator until firm, and that’s it. Watch the video above to see the technique in action. And, of course, make some!
