Cranberry Relish Recipe from Thomas Keller’s Ad Hoc

Honey Poached Cranberry Relish

12 ounces cranberries
2 ounces garlic, minced
2 cups water
1 cup Champagne vinegar
1 cup sugar
2 cups honey

Bring the vinegar, sugar, and water to a boil. Once dissolved, add minced garlic and allow it to come to a moderate poaching temperature.

Add the cranberries and lightly poach until done.

Strain the cranberries and reserve the liquid.

Reduce the liquid to a syrup.

Add the honey and bring to a boil.

Cool slightly and then add the berries.

Allow to sit overnight before making puree.

Blend using a vita-prep, adding the poaching liquid until a jam-like consistency is achieved. Keep blending until you achieve your desired consistency.
