Caramel Corn, Because the Emmys Are Tonight

The 66th Primetime Emmy Awards are today. In a few hours, in fact.

Yahoo will be live from the red carpet in downtown Los Angeles, California starting at 3:30 p.m. PT/6:30 p.m. ET.

You, on the other hand, will be live from your sofa, perhaps wearing plush red socks, crunching on caramel corn as you weigh in on winners and dresses. (Check out Joe Zee, Editor in Chief of Yahoo Style, doing a bit of the latter below.)

Caramel corn! Because you can! And it’s Emmy night! And it’s delicious! This recipe takes just 10 minutes of active cooking time before you bake it for 40 minutes, during which time you can put on your diamonds sweatpants, slap on some eyeliner scrub your face, and get prepared to smile a lot  relax.

Crunchy Caramel Corn

4 Tbsp. butter, plus more for baking sheet
10 cups plain unsalted popped (from 1/2 cup kernels or a 3.3-oz. bag microwave popcorn) popcorn
1 cup cashews, coarsely chopped (optional)
1/2 cup packed light-brown sugar
Coarse salt

Preheat oven to 300 degrees. Butter a large rimmed baking sheet; set aside. Place popcorn in a large bowl; if using cashews, add to bowl and toss to combine. Set aside.

In a small saucepan, bring butter, sugar, 1/8 teaspoon salt, and 2 tablespoons water to a boil, stirring constantly. Working quickly, drizzle popcorn with sugar syrup, and toss.

Spread popcorn evenly on prepared baking sheet. Bake, tossing occasionally, until golden and shiny, about 40 minutes. Transfer hot popcorn to parchment-paper-lined baking sheet; let cool.
