Cake of the Day: Valentine Hearts Cheesecake

Today’s cake comes from the food blog Always So Hungry. London-based Steffi Knowles-Dellner, a Swedish expat, spent her teenage summers working at Lisa Elmqvist restaurant in Stockholm’s Östermalmshallen food hall. Since receiving a diploma at the Leith School of Food and Wine, she’s been writing recipes at BBC’s Good Food MagazineAlways So Hungry is her labor of love.

As is this captivating cheesecake. Knowles makes the crust by combining melted butter with finely-processed biscuits and pistachio nuts; then she pours a filling composed of fresh clementine juice and cream cheese into it. To decorate the top, she makes a thick coulis sauce with pomegranate juice and uses a very steady hand to pipe and swirl the deep pink dots into hearts. The result is almost hypnotizing…
