Cake of the Day: Thomas Keller's 7-Layer Coconut Cake

First up, a profile of the country’s most revered chef, Thomas Keller. Here, we feature one of Chef Keller’s popular desserts, a 7-layer coconut cake, as our Cake of the Day.

If you want to butter up Thomas Keller, then bring him a slice of coconut cake. This seven-layer version is his childhood favorite: It’s made of four layers of coconut sponge cake, three layers of thick Bavarian cream, and covered with spreadable meringue and toasted coconut flakes.

You can only find the cake pictured here at Keller’s pop-up Ad Lib restaurant in The Silverado Resort and Spa in Napa Valley, Calif., where Chef Keller’s team is preparing updated versions of country club classics.
