Cake of the Day: Raspberry Cheesecake from ‘Mug Cakes’

Softly Set Raspberry Cheesecake
Serves 1
Preparation time 3 minutes
Cooking time 1¾ minutes

Generous ¼ cup (75 grams) full-fat cream cheese, softened
2 teaspoons vanilla sugar
1 egg yolk
2 tablespoons heavy cream
8 fresh raspberries, plus extra to decorate
1 graham cracker or amaretti cookie
Sifted confectioners’ sugar,for dusting

Put the cream cheese, sugar, egg yolk, and cream in a 7 fluid ounce (200 ml) microwave-safe mug and beat together until well mixed.

Microwave on full power for 45 seconds. Stir in the raspberries and microwave on full power for 1 minute or until the edges of the cheesecake are set but the center is still wobbly.

Crush the cracker or cookie, either loosely with your fingers or finely in a plastic bag using a rolling pin. Sprinkle the crumbs over the cheesecake and decorate with a few raspberries. Serve dusted with a little sifted confectioners’ sugar.
