Cake of the Day: Orange Sherbet Cake

Ivan Solis, of the design and lifestyle blog Designlovefest, gives us a fresh take on frosting a cake. This citrus dessert resembles a big ice cream push pop with layers of vanilla and orange sherbet that brings back so many happy childhood memories.

Using a store-bought vanilla cake mix, Solis substitutes the water in the batter with freshly squeezed orange juice. “Using pre-packaged juice will prevent your cake from rising to its true potential. So use the fresh stuff for the right texture,” he advises.

For the frosting he uses store-bought icing or, if you have time, you can make buttercream from scratch. He tops each layer with the white frosting and dyes the remaining into two pastel colors of pink and orange. Using a piping bag and frosting tip he applies the colors in bands and blends them into one another with an offset spatula.
