Cake of the Day: Gluten-Free, Vegan Tiramisu Cake

The Unconventional Baker, also known as Audrey Snowe, brings us a cake that’s gluten-free, vegan, raw, and paleo. Yes, all of those words can live in the same sentence as “cake.”

After being diagnosed with an autoimmune disease, Snowe had to change her diet. She did not have to change her love for baking, though, and she’s been able to recreate her favorite desserts without dairy or gluten.

Which brings us to Snowe’s version of the classic tiramisu. She starts with a “ladyfinger” layer made of ground walnuts, medjool dates, and coffee. For the chocolate mousse layer, she blends coconut cream, cocoa powder, coconut oil, and more coffee, and she helps thickens it with a gelatin substitute. At this point, the cake has already taken two turns in the freezer, and it gets one more once Snowe pours vanilla cream made of blended cashews and fresh vanilla bean over the top. She finishes with a dusting of cocoa powder.

So how does it taste?

“Happy to report it came out Incredible! Like eating it at 2AM incredible,” Snowe writes.
