Cake of the Day: Fruity Pebbles Funfetti Cake

Fruity Pebbles, the candy-like breakfast cereal of our childhood, grows up beautifully in this cake by Texas-based Katie Wahlman of the dessert blog Butterlust.

Wahlman starts with a vanilla cake batter adapted from Funfetti queen Molly Yeh, but instead of sprinkles, Wahlman uses crushed Fruity Pebbles. She bakes three layers of rainbow-flecked cake and then frosts them with a simple buttercream. Finally, she presses more Fruity Pebbles around the exterior of the cake for more color and crunchy texture. “At first bite, you’ll be transported back to Saturday mornings,” writes Wahlman, “sitting in front of your ‘television set’ (you know, the non-flat kind) watching Nick Jr. and stuffing your face with Fruity Pebbles. Only it will be CAKE!”
