Cake of the Day: Crêpe Cake with Dulce de Leche and Ricotta

Happy Bastille Day! To celebrate today we present to you the ultimate French dessert — layer upon layer of crêpes filled with creamy ricotta and sweet dulce de leche. The cake belongs to dreamy Swedish blogger Linda Lomelino and her stunning baking site Call Me Cupcake. Her photographs are beautifully styled, airy, and every shot contains fresh flowers. Her pink Neapolitan cake was one of Yahoo Food’s Best Cakes of 2014. Today she’s back with a stunning crêpe cake.

“I have a love/hate relationship with dulce de leche. It’s deliciousness is kind of deceiving,” she says about the caramelized milk used in crêpes. “After a while, the dulce de leche turned into a sauce and was running down the sides. I still wanted to share this recipe though because it is truly delicious, albeit somewhat messy.“

Lomelino makes a crêpe batter and fries the thin pancakes in a small pan. She piles them on top of each other with parchment paper between each layer to ensure they don’t stick. She then assembles the cake by taking one pancake and spreading a mixture made of ricotta cheese, powdered sugar and lemon zest. The next one gets a coating of dulce de leche and is layered on the previous pancake. She repeats this until she’s left with a tower of crêpes before finishing it off with fresh berries and a dusting of powdered sugar. Serve this with your favorite coffee and bon appétit!
