7 Healthy Meals You Can Make in 15 Minutes

As summer comes to a close, gone are the long days where you have time to linger over a meal on the porch. Weeknights are packed with carpool drop-offs, soccer practice, and homework. What with so much going on, it’s hard to make time to prepare a healthy, satisfying meal every night. Most nights, you probably need something that’s delicious and, more important, fast. To kickstart your week, here are seven scrumptious meals you can make in 15 minutes or less.

One-Pan Pasta

Leave it to Martha Stewart to be the first to come up with an easy one-pot pasta dish. You simply throw all the ingredients into a pot and boil for 10 minutes and voilà: a kid-friendly dinner in less than 30 minutes. Make this pasta now while you can still get your hands on end-of-the-season burst-in-your-mouth cherry tomatoes.

Spiced Salmon Kebabs

Flaky fish cooks up in no time, and these flavorful kebabs, seasoned with cumin, sesame seeds, and oregano, are super speedy because the salmon is chopped into one-inch chunks. To save even more time, when you get to the grocery store, head to the fishmonger first. Ask him to prepare the salmon. While he’s cutting it into pieces, run to the produce section and grab lemons and fresh oregano.

Turkey-Spinach Sliders

Kids love burgers. Sliders are the ultimate kid-friendly meal, so if you’ve got little ones, give this recipe a try! Ground turkey is mixed with tons of spinach, garlic, and green onions before being shaped into mini patties. Serve on slider buns with mayonnaise or, for an Italian spin, marinara sauce.

Black Bass With Warm Rosemary-Olive Vinaigrette

If you’re having guests over for a weeknight meal and want to plate up something elegant (but quick and uncomplicated), make this fish dish. Black bass (or any other thick, flaky fish that’s a good price at the market) is pan-fried with garlic, olives, and rosemary. Fresh-squeezed orange juice bathes the fish in a flavorful citrus sauce. Start with a cheese plate and serve the fish with couscous and mixed greens with dijon vinaigrette. Finish with vanilla ice cream and chocolate sauce for the ultimate weeknight dinner party.

Peanut Cold Soba Noodle Salad

Heat still on in your neck of the woods? Serve up this speedy cold soba salad for dinner. The noodles are combined with lots of fresh veggies—broccoli, carrots, red cabbage, cilantro, and radishes—and an Asian peanut dressing made with yogurt, soy sauce, sesame oil, and lime juice. If you have a food processor, use it to julienne the vegetables. You’ll cut the prep time in half.

Rosemary Citrus Shrimp Tacos

Shrimp cooks incredibly quickly and tacos are always a hit, so why not combine the two to make a fast, crowd-pleasing meal? These tacos are filled with white rice, but they would be just as wonderful with a bed of black beans or pinto beans. If you find yourself with a little extra time, whip up a batch of homemade guacamole to serve alongside the finger-licking-good shrimp.

Chile and Olive Oil Fried Egg With Avocado and Sprouts

A fried egg makes everything tastier, and in this simple meal, an olive-oil-fried egg is the star of the show. It’s served on a crispy whole-wheat tortilla with sprouts, avocado, and feta cheese. If you aren’t a fan of sprouts, substitute your favorite greens like kale, spinach, or arugula.
