Wisconsin Big Boy owners plan to open a Mexican restaurant with a ghost kitchen in Germantown.

The owners of Wisconsin Big Boy in Germantown plan to open a Mexican restaurant in Germantown.

Veracruz will be in the same building as Mama Mia's and Pick 'n Save on Mequon Road, said owner Chaz Hastings, who plans to open it with his partner, Scott Carleton. Hastings said they plan to have the restaurant open within 60 days.

Hastings said that the focus of the restaurant will be traditional Mexican food items for carryout. There will be limited seating and about four to six bar tables, as well as a small Mexican grocery store.

He said there will be beer and margaritas sold there.

"You can't do tacos without beer," said Hastings. "They go together ... margaritas too."

He also said that having a carryout restaurant fits in well with the other restaurants in the area, such as a Jimmy John's, McDonald's and Domino's. He noted that a family with different eating interests could pick up items at different restaurants for a meal.

The Veracruz menu will include grilled chicken dishes with Mexican spices. "That is very popular now," Hastings said.

He also said that the kitchen plans to operate as a ghost kitchen for Nathan's Famous, a hot dog specialty restaurant. Nathan's Famous dishes will be available through online ordering and apps such as Door Dash and Uber Eats.

Hastings said the new restaurant will be open from 11 a.m. to 9 p.m. daily. They plan to hire 10 to 15 employees, he said.

Hastings and Carleton also opened Tekila, a Mexican restaurant in Sussex, in December. Wisconsin Big Boy opened last July in Germantown after the chain left Wisconsin 26 years ago.

Hastings also plans to open two more eateries in the same building as Tekila.

La Coppa, a gelato eatery, should open by August, said Hastings. He also said Te Amo, a pizzeria and Italian restaurant, may open in November.
