Shyann Galvan's dream of owning her own restaurant has been everything she wanted and more. Since opening Blue Moon Bistro in 2021, the restaurant at 7501 state Route 83 in Holmesville has been a popular stop for breakfast, lunch and dinner.

Blue Moon Bistro is open Monday through Saturday from 7 a.m. to 8 p.m.

"I hope to inspire other people to follow their dreams. It took me 25 years to finally achieve my dream," Galvan said.

Galvan notes that the Over the Moon Scramble is one of the more popular items on the breakfast menu, featuring a choice of sausage, bacon or Taylor ham, scrambled altogether with eggs and shredded hashed browns, topped with cheddar jack cheese and sausage gravy.

Breakfast is served from 7 to 10:30 a.m., and features Taylor Ham, a specialty item straight from New Jersey exclusively served at the Bistro. Omelets, pancake wraps, meat and eggs, specialty sandwiches and wraps and Belgian waffles are also available to get your day started right.

Breakfast, coffee specials and great burgers

The bistro also features specialty coffee drinks, which Galvan has been developing with her espresso machine. She shares her love for coffee with her guests.

She adds that while breakfast has always kind of been her thing, she is also developing a reputation for the tasty half-pound hamburgers served at Blue Moon Bistro. Bubba's Belly Buster is a double burger made with Swiss and American cheese, and topped with onion rings, lettuce, tomato and Shyann's secret sauce.

"I've had a lot of compliments on my burgers," she said. "They are seasoned just right. I think that's the secret."

The menu also offers appetizers, salads, sandwiches and wraps and a breaded fish platter. They also have a weekly special.

Opened and thrived during time of pandemic

Some thought she was crazy opening a restaurant during the pandemic, but she said they kept plugging away and have managed to survive.

"I had the opportunity and it was time to jump in," she said. "I didn't want to look back and regret not doing this when I had the chance."

This spring, Galvan will be taking her delicious food to the streets with her new food truck.

"Serving some of our customer favorites out in the wild will be a new experience," she said. "We are so very excited about this new adventure."
