A new sushi restaurant has joined the range of offerings at The Streatery, the food hall in Louisville’s Beechmont neighborhood.

Anko Sushi opened in January at The Streatery, 304 W. Woodlawn Ave., which hosts several food vendors including Mochi Dog, Str8 Drop, Charcutie, and Da Tea.

Owner Anh Le said he has wanted to open his own business for years, following a decade as the general manager and sushi chef at Hiko-A-Mon in Westport Village.

“It’s always been a dream of mine,” Le told the Courier Journal.

At Hiko-A-Mon, Le learned what he calls an “old school” style of sushi making and the power of presentation. The chef also learned how to put his own twist on dishes.

The menu at Anko features 15 signature rolls, including one named after Muhammad Ali and another resembling a caterpillar, and classics including a fried chicken roll. There’s also a deep-fried roll named after the Beechmont area which The Streatery calls home.

“It’s a great neighborhood,” Le, 32, said. “They’ve come out to support a small business.”

In addition to sushi, Anko serves items such as quail egg shooters, bluefish tuna belly and housemade Tamago, a type of Japanese omelet.

Anko also has rotating weekly specials and serves ramen on Wednesdays.

Le said his creativity and the quality of fish on the menu set Anko apart. He has worked at restaurants since he was 16, around the time the Vietnam native immigrated to the U.S. He has lived in Louisville for 10 years and hopes to move Anko Sushi into a bigger, perhaps standalone location, in the future.

“My goal is to expand,” he said. “I love it so far.”
