This week in Springfield-area restaurant news: A vegan grill hits the road, an organic food truck opens and an Asian restaurant may be opening up in the former Rice House Restaurant location.

Bosky's goes mobile, plans to close on Walnut

Bosky's Vegan Grill will be hitting the road. The restaurant announced on its Facebook page this week that it will be running a food truck and closing its brick and mortar location at 405 W. Walnut St. through the end of the year.

According to its Facebook page, Bosky's will continue to operate as a food truck.

Food truck with focus on organic opening Oct. 23

A new food truck that serves items with natural and organic ingredients will have its grand opening Oct. 23.

417 Simply Better, 1904 S. Glenstone Ave., serves coffee with natural sweeteners, smoothies and avocado toast.

“My previous job had a lot to do with my business concept for Simply Better. I was working 60+ hours a week with very little time to focus on my diet," said Andrea Soriano, owner of Simply Better, in a Facebook post. "I needed something fast, convenient, and filling, but my choices were limited ... I wanted something simply made and better for my health.”

Asian restaurant to open up in former Rice House Restaurant location

A new restaurant is taking the place of what was formerly Rice House Restaurant on Kimbrough Avenue.

Fire permits, food permits and business licenses have been filed for Kimbrough Asian Cuisine Cafe, according to records on eCity, Springfield's online permit application service.

Kimbrough Asian Cuisine Cafe does not appear to be owned by Rice House Restaurant owners, according to filings on the Missouri Secretary of State online business filings. In the filing, Gabriela Colorado-Navarrete is listed as the owner of Kimbrough Asian Cuisine Cafe and Lin Wu & Company was listed as the owner of Rice House Restaurant.
