Immediately south of RibCrib BBQ on the 4400 block of North Kickapoo, a new restaurant will soon be in operation in Shawnee. To-go spaghetti restaurant By the Bucket is gearing up to open its doors.

According to the restaurant chain's website, at bythebucket.com, the Italian eatery is now expanding beyond its home state of Arizona.

Founder Bret daCosta started the business in 2018, the site reads.

He said he came up with the idea as a new single father, making spaghetti for his son.

“I soon learned that when you cook a pound of dried spaghetti it produces over two pounds of al dente pasta. Way too much for two; actually, enough for a large family.”

He said he found himself throwing much of it out. “That’s when I jokingly said to my son, Sam, 'If we could sell our left-over spaghetti, we could make buckets of money.'”

After running some numbers, he said he knew the cost of overhead would never work, but the bucket idea kept popping into his head.

“After all, Colonel Sanders sold chicken in a bucket so why not spaghetti?” he said.

The chain now has seven restaurants established in Arizona, and 15 more in the works, including three outside the state — one in Iowa, one in Utah and the Shawnee site.

By the Bucket sells hot spaghetti to go in a bucket, meatballs, meatball subs, desserts and cold drinks.
