Try burgers from ‘Top Chef’ stars Bryan and Michael Voltaggio at Vibrant Music Hall

Skip the dinner reservations before a show at Vibrant Music Hall, the new live entertainment venue in Waukee.

VIP and premium concert-goers can order off a menu that includes cheese curds topped with ranch and bacon and spicy chicken soft tacos. Dishes from celebrity chefs — such as Brooke Williamson of "Top Chef" fame and brothers Bryan and Michael Voltaggio, as well as actor Danny Trejos, among others — marks the first time these dishes make their way onto a menu in Iowa.

But the expanded menu isn’t limited to just food.

Catch a few cocktails off a menu designed by Live Nation’s mixologist in addition to the usual drink options such as beer, soft drinks and wine.

The Des Moines Register visited the Live Nation-owned venue, the first in Iowa, on Nov. 2 to tour it with general manager Haleigh Biancalana and sample its menu. Here’s how you can get your hands on cheesy nachos loaded up with brisket or an espresso martini the next time you’re at a show.

What drinks can I order at Vibrant Music Hall?

Sean Kenyon, a mixologist with Live Nation since 2017, is responsible for the cocktail menu at Vibrant Music Hall. Kenyon owns two bars in Colorado, including the Williams & Graham, which was a semifinalist for a James Beard Foundation Award for Outstanding Beverage Program, a top honor in the culinary industry.

Order a strawberry vodka lemonade or a cherry bourbon lemonade for something sweet and refreshing. That’s in addition to four margaritas: the prickly pear; the smoked desert, which is essentially the prickly pear margarita with mezcal and tequila, Kenyon explained; the watermelon chili; and the Liquid Death — a brand of sparkling water — Mango Chainsaw margarita that’s light and carries just a hint of sweetness.

Another beverage is the Vibrant Old Fashioned, made with Swisher distillery Cedar Ridge bourbon with a square ice cube that’s stamped with a logo of the Red Room and perfect for a photo op.

Other beverages include a rich espresso martini and the No-Jito, a non-alcoholic mojito made with Owen’s Craft Mixers and Liquid Death.

A nonalcoholic menu is currently in the works for all Live Nation venues, Kenyon said, but customers can order all the cocktails sans alcohol in addition to soda or sparkling water such as Liquid Death.

Drinks can be purchased in refillable shakers that customers can take home as a souvenir.

What food from celebrities is available to order at Vibrant Music Hall?

Go for something familiar like Bryan and Michael Voltaggio’s Volt Burger, made with two smashed patties topped with American cheese, ketchup, mustard, pickles and onion. The Voltaggio brothers are chefs who have collected numerous accolades between them, including a "Top Chef" win for Michael and being a semifinalist for a James Beard Foundation Award twice for Bryan.

Folks looking for a meatless option can get the Legendary burger, which is a plant-based patty with American cheese, ketchup, mustard, pickles and onion.

Bar favorites on the menu include a jumbo pretzel served with stone-ground mustard, a perfect option for sharing, and a jalapeno cheddar bratwurst served with a side of barbecue sauce.

Celebrity chef Tim Love, known for CNBC’s “Restaurant Startup,” is to thank for the nacho platter, smothered in queso and topped with smoked brisket and pico de gallo.

The menu includes Trejo’s Tacos, the restaurants in Southern California from actor Danny Trejo, who appeared in "From Dusk Til Dawn," "Heat" and "Machete." The two meat options are the spicy chicken tinga or the juicy beef barbacoa on corn tortillas.

If you’re in the mood for something more Midwest, try the Wisconsin cheese curds topped ranch, bacon bits and green onions.

Final menu items include chicken tenders and fries and tater tots covered in a kimchi-flavored cheese sauce, sesame oil, green onions and sesame seeds. The tater tots the creation of chef Brooke Williamson, Season 14 winner of “Top Chef” who has made appearances on “Guy’s Grocery Games” and Food Network’s “Beachside Brawl.”

Who can purchase these food items at Vibrant Music Hall?

The food menu is only available for ticket holders who have access to the VIP lounge, known as the Red Room, or for concert-goers in the premium box seats. Customers in those seats can order from their server and have their food delivered to them. People can purchase access to the VIP lounge in addition to their general admission ticket to enjoy its amenities and food menu, though the number of people who can purchase this upgrade depends per show.

The bar in the Red Room will also serve additional alcoholic drinks that can’t be found at the other bars across the venue, though all bars at Vibrant Music Hall will serve cocktails, beers and nonalcoholic drinks. The bars also have warmers to sell food such as popcorn and pretzels.
