Stacey Weber's restaurant and upscale market Amelia's by Eat is now open in Scottsdale

Stacey Weber, the owner of Eat by Stacey Weber, a gourmet healthy food catering company, opened restaurant and market Amelia's by Eat in Scottsdale on Sept. 13.

"It's not fussy," Weber said. "Bring your family, bring your friends, bring your kids."

The restaurant is named after Weber's grandmother who inspired her to cook. "She was the most amazing cook and when she visited from Germany every summer, we'd have the best dinners on the table every night. Like, simple delicious food." Amelia was her grandma's middle name and though she hated it, Weber always loved it.

By opening a restaurant, the longtime caterer hopes to make her food available to more people at all times. "People forget to put their online orders at Eat by the cutoff time. With Amelia's, they can have the food whenever they want."

Weber's draw to whole foods came from her years as a personal chef working for athletes like Grant Hill, a seven-time NBA All-Star. "He was so particular about what he ate and he played for so long," she said. "It was fascinating to see how what people put in their bodies affected them."

Weber started working as a private chef in 2007 and in 2015, she opened a brick-and-mortar catering space at the corner of Shea and Tatum boulevards. In the same year, she also started working with the Arizona Cardinals' culinary operations.

"I'm not into limiting people. I still want to eat fried chicken and burritos. I just pay attention to the ingredients that go into them," she said.

What to expect at Amelia's by Eat

According to Weber, the 2,500-square-foot, 60-person restaurant and market is "very, very Arizona," with a lot of natural colors, marble, white oak, concrete floors and succulents.

The space includes a grocery-style refrigerator packed with wine, salads, sushi and some of Eat's tried and true favorites like snack packs and chicken salad to-go.

The bakery case offers croissants, sweet treats and fresh baked multigrain, white and focaccia breads.

The market also features artisan pantry items like salts, crackers, olives and nuts.

"We are working really hard to mindfully curate what we are serving," Weber said. "We are trying to make eating well easy and enjoyable for people."

Weber calls the counter service restaurant an all-day eating place.

Morning options include breakfast sandwiches, quiche Lorraine with a gluten-free crust, avocado toast and Eat's popular enchiladas to which guests can add an egg.

Amelia's also serves coffee with scratch-made syrups and nut milks.

The lunch menu features Weber's famous chicken salad, a soup of the day served with house-made focaccia bread, salads like a Caesar with crispy capers and oven-roasted tomatoes, a vegan falafel salad and heartier dishes like wild salmon, southwest chicken, beef tenderloin sliders, burgers, gluten-free chicken pot pie and rotisserie chicken.

"We focus on clean ingredients," Weber said.

After 3 p.m., the restaurant stops serving lunch and offer BYOB — build your own boards. The nosh boards can be customized with a plethora of meats, cheeses and kid-friendly items, like fruit, chicken, steak, salmon and French fries. Aside from charcuterie, guests can also add hot options like lasagna and meatballs to the boards. Guests can also order Weber's favorite snack, soft pretzels, which of course are made in-house.

To drink, Amelia's has icee machines stocked with fresh juices and frozes plus a full bar with a selection of wines that complement the dishes, beer and cocktails made with fresh-squeezed juices and house-made syrups, like the signature spicy margarita.

"I’m creating the place I’ve always wanted in Scottsdale,” Weber said.
