New restaurant: Miami-inspired steakhouse opens in West Palm Beach's Dixie Corridor

Restaurateur/chef Julien Gremaud’s dream of opening a modern, less “manly” steakhouse on West Palm Beach’s Dixie Corridor is now a reality.

His Pink Steak restaurant recently opened for private previews. The steakhouse made its official debut Wednesday, Dec. 20.

Here are four things to know about Pink Steak in West Palm Beach.

The restaurant's vibe channels Miami.

Gremaud, who also owns Avocado Grill and Avocado Cantina, wanted to bring a club-inspired “Miami vibe” and a “chic but retro” look to the 4,500-square-foot space. Hence the 15-foot brass flamingo statue, palm-frond-green touches and pink chandeliers in the dining room.

The Miami inspiration also extends to the rhythmic sounds and flair for the exuberant: Gremaud has added a DJ booth in the open kitchen.

The menu is modern, luxurious.

The Pink Steak menu does love its steaks and chops, but it also offers a large variety of fish and seafood dishes, from raw bar platters to sushi rolls to crudos.

Glam touches include caviar service, truffle shavings, a vegetable Wellington, Maine lobster risotto and Burgundy braised escargot with garlic, parsley, porcini and puff pastry.

Steak prices range from $55 for bavette steak to $235 for tomahawk wagyu.

The chef is a Palm Beach County star.

Gremaud brought in veteran chef Aaron Black to be Pink Steak’s executive chef. The two go way back, having worked together at Pistache in downtown West Palm Beach, where Gremaud was executive chef.

Later, they worked together at PB Catch before Gremaud left to open Avocado Grill. Black would become executive chef at the seafood-centric restaurant.

Most recently, Black served as executive chef at the now-closed Josco Garden in Tequesta, where he overhauled the menu.

There’s plenty of seating at Pink Steak.

Pink Steak boasts a wraparound, indoor bar and a 120-seat main dining room. There’s also a spacious, 55-seat al fresco patio.
