New restaurant: Mexican eatery featuring creative burritos opens in Martin County

A fast-casual Mexican restaurant chain has opened a location in Martin County.

Bubbakoo’s Burritos opened May 22 in a strip plaza on U.S. 1 in Stuart next to the Flamingo Diner, in the former location of Asian Market Specialty Products across from the Wedgewood Commons Shopping Center.

The new restaurant offers the brand’s classic menu items, such as the hibachi steak and shrimp burrito, sriracha shredded pork nachos and Nashville hot chicken burrito. Its entrees are customizable and made with fresh ingredients.

First, customers choose a burrito or bowl, a taco trio, a taco salad, a quesadilla, nachos or the “chiwawa.” Then, they choose a protein: grilled chicken, shredded chicken, crispy chicken, ground beef, carnitas, veggie patty, hibachi steak, hibachi shrimp, barbacoa or vegetarian. Finally, they add fresh toppings of rice, beans, salsa, sour cream, jalapenos, corn salsa and/or cheese; or premium add-ons of guacamole, bacon, queso or fajita-style.

Other signature creations include:

  • Crispy chicken sriracha ranch bacon quesadilla

  • Mango habanero grilled chicken taco salad

  • A.1. steak burrito

  • Buffalo cauliflower burrito bowl

  • Garlic Parm shrimp quesadilla.

The menu also has chicken wings, boneless wings, cauliflower bites, curly fries, chips and other sidekicks: cheese curds, jalapeno poppers, beef empanadas and single tacos.

The Stuart location is owned by Mio Aponte, Jackson Baillargeon and Jack Scharnagl. Aponte previously worked as the general manager of various corporate-owned Bubbakoo’s Burritos restaurants.

It’s the company’s 15th location in Florida. It’s also the brand’s eighth opening this year with more locations opening in the coming months, including one in Cape Coral.

Bubbakoo’s Burritos was founded by Paul Altero and Bill Hart in 2008, and they opened their first store in Point Pleasant, New Jersey. It has expanded to more than 100 locations across 16 states.
