Inspector Notes: Observed an employee wash a pan without using sanitizer. When the PIC was asked the process of using the three compartment sink, he did not know there was a sanitizer step. Observed sanitizing solution in the sani bucket exceeding the maximum concentration allowed >200ppm. Observed potatoes and other food items stored on the floor in the kitchen.

Inspector Notes: Observed both handsinks to not have soap at the beginning of inspection. THe first hadnsink also had a dish rack in the way and was not easily accessible. Observed inconsistent date marking throughout facility. Also observed some food items with dates exceeding 7 days. Observed wet nesting within dishes on clean dish rack. Observed employee items on or above facility items (phone, airpod, speaker).

Inspector Notes: Observed employee beverages (without lid and straw) stored on and over prep areas. Observed food items stored uncovered in reach-in cooler and prep top cooler (vegetables and fruits). Observed box of sauces stored on floor. Observed wiping clothes stored on multiple prep surfaces. Educated PIC on storing wiping clothes must be stored in clean storage, dirty storage, or in sanitizer bucket. Observed single-service bowl being used as a scoop in bulk spices. Observed rice scoop stored in standing water at room temperature Observed scoop handle in contact with flour.
WAFFLE HOUSE, 8 STEPHEN GREEN DRIVE, SAVANNAH, 85
Inspector Notes: Observed pink and black mildew-like substance on the walls and baffle of the ice machine. Observed chili (125F) and mashed potatoes (110F) to not be held at 135F.
