Inspector Notes: Observed prep top in front service unit not maintaining a temperature of 41F or below (see temperature logs). PIC discarded affected items in prep top cooler. Also, observed prep top in main kitchen with takeout sauces (salsa, sour cream, Mixed fruit cups, ranch etc.) All temperatures approximately 48 degrees F. Time was marked on time labels at 1:20 p.m.

Inspector Notes: Observed walk-in cooler holding temperature of 44F ambient. Door has a large hole in the bottom of the door and gaskets are not fully sealed. Door is opened constantly during service without any curtains. Observed reach-in cooler not able to hold temperatures of 41F or below. Observed major leak in piping leading from sanitizing basin in prep kitchen. Observed main bar hand sink hot water knob to not be operational. Observed arcade bar triple sink hot water knob to not be operational. Observed large floor drain in prep kitchen to not have a drain cover.

Inspector Notes: Observed chicken in steam well not holding at 135F or above. Observed multiple food items held over 24 hours without date marking.

Inspector Notes: Observed mildew like build up on baffle of ice bin in dry storage. Observed mildew like build up on ice outlet of drink machine. Observed boxed food items stored on floor in walk in freezer. Walk in freezer has a condensation leak that is causing the walk ins to flood. Observed boxes of chips and cookies on floor in front food service area. Observed no sanitizer test strips in the facility to verify bottled sanitizer solution is at the right concentration. Observed standing water on floor in walk in cooler. Observed water and food debris on bottom surface of reach in/prep top cooler. Dry storage are needs swept.
STAR KITCHEN. 2504 SKIDAWAY ROAD, SAVANNAH, 82
Inspector Notes: Observed a watermelon by raw chicken, chicken next to raw shrimp and beef in the walk in cooler. CA: Food should be separated by cooking temperatures to ensure there is no cross contamination. Observed raw beef ribs and raw chicken wings stored uncovered in the walk in cooler. Observed employee at three compartment sink washing in one compartment just with soap and no water, no rinse, and no sanitizer set up in other compartments. There was a pan of thawing tripe setting in the empty sanitizer compartment. Tripe was an employee food item. Observed damp cleaning cloths on prep tables in main kitchen. Observed tin cans being used as scoops in the flour, sugar, and rice bins. CA: PIC removed tin cans and found lids for containers. Observed employee foods mixed in with restaurant food for preparation and consumption.

Inspector Notes: Observed raw chicken beside raw beef and above whole eggs in the walk-in cooler. Observed TCS food items in the prep top and reach in cooler in the main kitchen exceeding 41F.
BASIL THAI KITCHEN, 7804 ABERCORN ST., SPC FC-11, SAVANNAH, 81
Inspector Notes: Observed items throughout facility stored uncovered (spring rolls, shelf of sauces, chicken, bobba tea bubbles, and broccoli) and subject to contamination. Observed containers of raw chicken, an open bag of flour, and bucket with food product sitting on the floor of facility. Observed raw shell eggs sitting on prep top cooler. Observed bleach concentration in Sani-bucket in main kitchen to be over 50 ppm. Observed bowls being stored in rice, sugar, and flour bulk storage containers. Observed scoop with handle touching food product and bowl being stored in bucket contaminating food product. Also observed utensils for tea stored in water not being held at 135F or above. Observed no chemical test kit provided when using chemical sanitizer at three-compartment sink.
