Inspector Notes: Observed food items in the reach in cooler cold holding above 41F. CA: PIC rapidly cooled food items prepped under 4 hours, and food items prepped over 4 hours were discarded.

Inspector Notes: Observed reach-in cooler maintaining temperatures of 43-44F ambient. TCS food within (egg salad, broth and marinara) were holding temps of 44-47F. CA: PIC turned the unit from 40F to 36F. PIC indicated that the unit is opened and closed constantly throughout shift. Recommended spacing frequently used food items throughout the facility coolers to eliminate constant opening of the cooler. During inspection, the unit was able to drop to an ambient temperature of 39F. TCS food items not prepared today and not within temperature range were discarded (broth, marinara, egg salad). Observed whipped cream stored in reach-in cooler not capable of maintaining temperatures of 41F or below. PIC indicated that the unit was just used to store wine primarily.

Inspector Notes: Observed prep cooler not maintaining temperature. (all temperatures on top of prep cooler at 51 degrees F., and 47 degrees F in the drawers). PIC discarded affected items (beef, cheese, spinach, pepperoni, tomatoes, lettuce etc.) Observed bag of onions, bucket of pickles and corn meal stored on the floor. PIC stored items appropriately. Educated PIC on maintaining food product stored 6 inches off floor. Observed employees wearing watches while preparing food. Educated PIC to allow only a plain wedding band, no other jewelry allowed. PIC had employees remove watches. Observed multiple wiping clothes stored on prep surfaces. Observed knives stored in-between equipment at bar. PIC removed for wash/rinse and sanitize. -Observed scoop handle in contact with food product (bulk flour). PIC removed scoop. -Observed utensils stored in sanitizer behind bar. PIC removed. Educated on wash, rinse, sanitize, and then air-drying. Educated on proper utensil storage.

CILANTRO'S MEXICAN GRILL #5 INC., 461 JOHNNY MERCER BLVD., SUITE 11, SAVANNAH, 87

Inspector Notes: Observed beer walk-in cooler not capable of maintaining temperatures of 41F or below (ambient: 44F). Cooler door does not close fully without an additional push. Observed multiple large containers of beans holding temperatures of 44-45F. The food items were cooked two days prior to inspection. The food around the beans were elevated in temperature as well (chicken-43F, chicken soup-44F, pork-44F). Observed tubes of ground beef thawing in prep sink without a steady stream of cold water on tubes. CA: PIC turned stream to an appropriate strength. Observed plate on floor near back door of kitchen to be able to pull up revealing a hole. Observed employee cellphone stored on top of roll-top cooler. Observed employee purse and backpack stored on boxes of soda concentrate in main kitchen. 

ABERCORN REHABILITATION CENTER, LLC, 11800 ABERCORN ST., SAVANNAH, 86

Inspector Notes: Observed hand sink in main kitchen to not have an soap at the start of inspection. COS/CA: PIC got the maintenance team to restocked soap. Observed hand washing sink to not be stocked with any hand drying items. Observed one of the holding cabinet on the right storage area to have a containers of old and molded food (bread and eggs). Observed wet stacking of bowls and plates in cabinet near the stovetop. RCA: Facility shall allow all dishes to air dry completely prior to stacking. 

BAYMONT INN & SUITES, 357 MAIN ST., GARDEN CITY, 85

Inspector Notes: CSFM certificate is not present. Advised PIC to ensure a certificate is present at all times. Observed waffle batter in the reach-in holding at 51 F after service. Advised PIC to include more ice packs and monitor temperature to ensure food item is holding below 41 F.

Inspector Notes: Observed multiple TCS food items on hot line and in hot holding cabinet below 135F. Observed no outward protecting sneeze guards on any self-serve area. Observed walk-in freezer door hinge does not close door properly. Observed loose gaskets on doors for cold/hot holding. Observed back door to kitchen missing kick plate. Observed hood vents with accumulation. Observed build-up behind dishwasher on wall. 

OLYMPIA CAFE, 5 E. RIVER ST., SAVANNAH, 85

Inspector Notes: Observed raw ground beef burgers stored above seafood (shrimp, scallops, grouper) in walk in cooler. Observed chicken and lamb stored above snapper in reach in freezer. Observed lamb and beef stored above chicken tenders in freezer. Observed pork and chicken stored with bread in freezer. Observed dust/debris on soda nozzles in main kitchen and server station. Observed mildew like build up on slushy dispensing nozzle in main kitchen and in ice cream parlor. 

ARBY'S, 220 W. HWY. 80, SAVANNAH, 83

Inspector Notes: Observed dish machine with sanitizing concentration of 10 ppm chlorine. Advised PIC to maintain dish machine sanitizing concentration of between 50-100 ppm chlorine at all times. Observed various food items (lettuce, sliced tomatoes, steak and cheese, etc.) in the prep-top cooler holding above 41 F. Advised PIC to ensure all cold-holding TCS food items are holding at 41 F or below at all times. 

NORWOOD TAVERN, 2130 NORWOOD AVE., SAVANNAH, 81

Inspector Notes: Observed spotted black dots along baffle of ice machine in main kitchen area. RCA: Facility shall increase the cleaning frequency of ice machine to prevent any accumulation. Observed multiple TCS items ( mac and chicken salad, ground beef, and raw chicken) in residential reach in cooler to be at temperatures above 41F.  Observed two pots of beef chili to be cooling at room temperature in the main kitchen on a cart. Chili was removed from stovetop at 10:30am. Observed a box of chicken thawing at room temperature in the main kitchen on a cart. Chicken was thawing since 11am. COS/CA: PIC placed chicken in the reach in cooler to complete the thawing process. Observed old food debris accumulation on the interior lining of the cold holding units (both reach in and prep top cooler). Observed the lining of the shelving units to have old food debris accumulated. Observed heavy grease accumulation along the sides of the fryer and stove stop in the main kitchen. Observed walls ( behind and around fryers) and floors (main kitchen and dry storage) throughout the facility to have debris and grease splatter. 

MY CARIBBEAN PLACE, 284 PENNSYLVANIA AVE., SAVANNAH, 75

Inspector Notes: Observed facility did not have a CFSM. RCA: Food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) to ensure food safety is being managed within the food service establishment during all hours of operation. Observed raw chicken in contact with raw lettuce and potatoes in reach-in cooler. Observed raw chicken stored above cooked chicken, mutton and containers of condiments. Observed multiple opened food packages uncovered or unwrapped (rice, beans, pasta). Observed no food items in cooler with date labeling. Upon inquiry employee stated that food had been made the day prior. Observed facility did not have last inspection report on display. Observed facility's sanitizer testing strips were waterlogged.
